Ingredients of Red Curry Paste: 

Lemongrass, Turmeric, Galangal, Dried chili, Star anise, Cinnamon, Garlic, Red Garlic, Kaffir Lime leaf, Chili Oil, Shrimp paste, Palm sugar, Fish sauce, Sunflower oil

How to cook Chicken Curry

Ingredients: 

  • Red curry paste 1 pack 80g
  • Chicken 300g 
  • Vegetable as you like (eggplant, long beans, potato, carrot) 200g 
  • Coconut milk 240ml
  • Fresh milk 120ml
  • Water or soup 120ml
  • Chili oil 30ml
  • Sweet Basil 2-3 leaves 

How to cook: 

  1. Put half of the chili oil into the pot then the red curry paste to stir together. Put the chicken stir with the paste then add some fish sauce , palm sugar, and half of the coconut milk. Steam for a few minutes, before adding the vegetables.
  2. When the chicken meat and the vegetables are nearly cooked, add water or soup, fresh milk, and the coconut milk and the chili oil that's left.  Steam for another few minutes and taste it. Decorate your plate by sprinkling a few leaves of the sweet basil.
